So at about 02.25 I decided to give up on trying to get to sleep. After preforming an 8-point turn I got out of bed and crept down the stairs. I firstly dismantled the maxi cosi and put the cover in the wash. I hadn’t thought of washing it, but a friend had reminded me this afternoon to do so as you never know what kind of dies etc they use in the factory. After that I decided to assemble a chicken casserole. I have been slowly filling up the freezer with meals for after my delivery. If left to Mr Mermaid I would have to survive on a diet of pizza, sandwiches, pizza, burger king, sandwiches and oh maybe a tin of soup.
If any of you would like to try the casserole for yourself, here is the recipe. The good thing about food like this is that you do not need to stick too much to the amounts or even the ingredients. Find the veg at the bottom of your fridge and use those!
- 1kg of chicken thighs (with or without skin)
- 250 gr of bacon
- 2 onions
- 4 small garlic cloves
- 2 medium carrots
- 4 sticks of celery
- 1 leek
- 2 handfuls of baby potatoes
- Half a bottle of white wine (the alcohol will evaporate so no need to worry about passing it on to the baby)
- Olive oil
- salt and pepper
- chicken stock (about two stock cubes and 500ml water)
- 2 tbsp flour
Dust the chicken thighs in seasoned flour. Fry them off in some olive oil until nicely browned. Fry off bacon. Remove from casserole and set aside. Turn down the heat and add all the roughly chopped vegetables, leave to sweat and soften for about 7-8 minutes. Add the chicken and bacon and turn up the heat. Pour in the white wine and scrape the bottom of the casserole. Add chicken stock until the veg and chicken are covered. Bring to a boil and leave for about 3-4 minutes. The turn the heat down and leave to simmer until the chicken is cooked and falls of the bone. This will take about an hour. Leave to cool completely before freezing, or serve while hot with some crusty bread.
